In a medium bowl, mash the avocado and season with salt. If you desire, sprinkle with fresh lemon juice. You may smash the avocado directly on the toast if the bread is firm enough.
Top each piece of toast with half of the avocado mixture.
To fry the eggs: heat a non-stick skillet over medium-high heat. Spray with non-stick cooking spray, butter, or olive oil. Add the eggs to the skillet and fry until the whites are set.
Place one egg on each piece of toast.
